Cups to grams

Cups to grams, ingredient by ingredient

A cup of flour and a cup of sugar weigh very different amounts. Pick the ingredient, type the measure, and get an approximate weight in grams, or work backwards from grams to cups and spoons.

1 cup of all-purpose (plain) flour is about 120 g.

King Arthur Baking lists 1 cup = 120 g.

Spoon and level, or scoop?

How you fill the cup matters as much as the ingredient. Spooning flour lightly into the cup and levelling it off with a knife gives a lighter cup than dipping the cup into the bag and scooping, which presses the flour down. The difference can be enough to make a cake dry or a dough stiff. Brown sugar is the exception: recipes expect it pressed into the cup, and the figure here is for packed brown sugar.

So treat every figure as approximate, and if a recipe says how to fill the cup, do it that way. Flours also vary between brands and countries. King Arthur Baking recommends weighing ingredients on a digital scale for the best results, and when a recipe gives grams, that is the surest way to follow it.

Sources

Weights come from King Arthur Baking's Ingredient Weight Chart, a widely published reference for home bakers. Where it lists a smaller measure (½ cup of butter, 1 tablespoon of honey), the other amounts are worked out from that figure. A US cup is taken as 236.6 ml and a metric cup as 250 ml.

Questions

Why do different websites give different weights for a cup of flour?

Because they fill the cup differently. Charts based on scooping give higher figures than charts based on spooning and levelling. Pick one method and stick with it.

How many grams is a stick of butter?

A US stick is half a cup, or 8 tablespoons, and King Arthur Baking lists it at 113 g.
